Tire Meatsticks Video

tire-meatballs Aegean Region is famous for its endless number of green species.But here, in Tire ( Tire is  a county of Izmir in Aegean Region)there is a yummy dish called Tire  Meatsticks (Tire Koftesi) and it tastes marvelous. And also there is a street where there are several restaurants serving Tire Meatsticks. Even if you enter this street with a full stomach, you’ll start to feel hungry. Therefore, I learnt how to make these scrumptions meatballs from a cook of one of these restaurants. And now,we don’t need to go that street to have Tire meatsticks. And it’s a pleasure for me to share its recipe with you.

Here is the recipe:tiremeatballs13

Ingredients:

  • 500gr minced meat
  • A pinch of salt

for sauce:

  • 4-5 middle size tomatoes                                                                                           
  • 1 tbsp butter
  • A pinch of salt
  • A pinch of red pepper
  • 6-7 leaves of parsley
  • 4-5 leaves of dill

Firs of all lets prepare meatballs. Knead the minced meat with salt( attention: only salt!) well then put the minced meat in refrigerator.Wait it in refrigerator for a day. The other day take pieces from minced meat as the size of a walnut then form it in your palms by setting on skewers. After setting the whole  minced meat on skewers cook them on a grill.

Let’s prepare its sauce. Peel the tomatoes and chop them.( to peel them easly put some hot water in a bowl and put tomatoes in it.) Put a pan on fire and put 1 tbsp butter  in it and melt it then put the chopped tomatoes in it. Take the grilled meatsticks from skewers as a whole. Be careful not to shutter them. When the tomatoes melt put the meatsticks on it. Cook them for 4-5 minutes.

Wash the parsley leaves and dill leaves after waiting them in water with vinegar. Before serving mince parsley and dill leavesand sprinkle them on meatsticks.

Oscar Cake

oscar-pastryLast day there were Academy Awards on Tv and I wondered  who would win Oscar Awards, who would look at the Oscar statuette and cry? I got excited as the stars. I had favourites naturally.

For example, Frost/Nixon. My favourite film candidate was Frost/Nixon. Unfortunately Frost/Nixon didn’t win the Academy Awards.

My husband and I watched the night with this yummy cake. We ate this yummy cake with cups of tea.

 Ingredients:

  • 1 cup of milk
  • 1 cup of sugar
  • 3/4 cups of corn oil or sunflower oil
  • 2 1/2 cups of all pupose flour
  • 1 tbsp cacao
  • 1 packet of baking powder
  • 1 packet of vanilla

 

  • 1 tbsp nescafe
  •  1 cup of milk
  • 2 1/2 cups of chocolate sauce

 Recipe:

First of all mix egg and sugar with the help of mixer then add cacao, milk, all purpose flour and baking powder in it and mix it with mixer perfectly. Spread  oil the cake mold with a brush then pour the mixture in it. Bake it at 180ºC – 355 ºF for 25-30 minutes. Pour the milk in a bowl and add nescafe in it then when the cake gets warm, make little holes on it with a knife. Pour the milky nescafe on the cake then pour the chocolate sauce on it.

You can garnish with coconut. A few hours later you can serve it!

Kisir

kisir2      Probably Kisir is the most popular dish of all in every Turkish home. We can say that Kisir is a traditional dish. The recipe of Kisir changes from region to region even from home to home. For example, some people saute the onion with tomato paste, some add it raw. And the spice choices of people also vary. Besides,some eat this savory dish with grapevine leaves while some prefer lettuce instead.

This is my easy Kisir recipe: 

Ingredients:

  • A cup of pounded wheat 
  • 2 cups of boiled water
  • 1 tbsp tomato paste
  • 3-4 tbsp olive oil
  • A pinch of red pepper
  • A pinch of salt
  • A bunch of parsley 
  • A bunch of green mint
  • A bunch of green onion


Recipe:

Put the pounded wheat  (A cup of pounded wheat for each person who will eat.For two people, two cups, for three people three cups, and so on) in a large bowl then add hot water on it and wait for about 15-20 minutes.

Wash all vegetables very well. Put them in a pot and add water passing over the level of vegetables and then for your hygiene add 2 tbsp vinegar in it.Wait for about 15 minutes. 

After that put a pan on fire and put olive oil in it after heating the oil put tomato paste in it and saute the tomato paste with olive. Then sprinkle a pinch of red pepper.

After draining, chop the vegetables. Add chopped vegetables and sauted tomato paste to brewed pounded wheat then add salt and stir it.

You can add lemon juice on it while eating.

If you like sweetbasil you may add it in that mixture. It tastes very good in it I think.

Pilaf with chickpea

pilaf    Pilaf is a dish that made of rice and pounded wheat. Last day I made pilaf with chickpea and I want to share this yummy pilaf’s recipe with you:)

Ingredients:

  • 1/2 cups of boiled chickpea 
  • 1 tbsp butter
  • 1 cup of rice
  • 2 1/2 cup of hot water
  • A pinch of salt

Recipe:

Wash rice very well and drain it. Put a pot on fire then put butter in it. Melt the butter then put rice in it. Saute the rice in it. After sauting, pour hot water on it then add boiled chickpea in it. Add a pinch of salt in it and cook it until the rice boils down. When the rice boils down, put a piece of paper towel to lid and cover the lid on the pot. Serve it after waiting for 10-15 minutes.

Season Vegetable Salad

If you are a vegeterian  or you don’t want to eat anything at nights you can eat this season vegetable salad. You can eat this salad as side dish also.

Here is the easy recipe of this salad:

  • Ingredients :
  • 3-4 leaves lettuce
  • 5-6 stalks of parsley
  • 3 stalks of dill
  • A few leaves of kale
  • 2 tomatoes
  • 3 stalks of green onion
  • 2 stalks of green garlic
  • A pinch of salt
  • 2 tbsp olive oil
  • 2 tbsp apple vinegar
  • A few olive (for garnishing)

Recipe:

First of all wash all vegetables very well. Put them in a pot and add water passing over the level of vegetables and then add 2 tbsp vinegar in it.Wait for about 15 minutes. Using vinegar protects us from disinfection and microbactere. Chop all green vegetables to pieces then chop tomatoes and kale leaves. Sprinkle a pinch of salt and add 2 tbsp olive oil in it.Take chopped vegetables on a service plate and garnish it with olives.

Cheese Morsels

cheese-morsels2    When my cousine phoned me from airport and said she would be here with in half an hour. I wanted to make something special for her so I began to prepare this marvelous cheese morsels. My cousine  studies chemistry at Middle East Technical University. She studies very hard and she is always very busy. Her education is very important but we miss her very much. Because of this reason I wanted to make Cheese Morsels that she loves so much. When she came, first of all she looked at the kitchen to see what I made for her. When she saw my surprise for her she embraced me once more with a big smile on her face. I realized that I missed her more than I thought.

Ingredients :

  • 6-7 slices of bread
  • A cup of curd or white cheese
  • Half bunch of parsley
  • 5-6 stalks of dill
  • 1 egg
  • 1 tbsp butter
  • A pinch of red pepper


Divide the bread slices into two pieces. Lay  fireproof paper into oven tray then put the divided bread pieces on it. Wash parsley and dill very well then drain them.After washing and draining mince them. Smash the curd. Put curd, egg, dill, parsley and red pepper in a pot then stir them well.  Spread butter on bread slices then spread the curd mixture on butter preheat the oven and heat bread slices for about 10 minutes on  180ºC ( 340 ºF)

Lentilball

lentil-ball     The name of this dish is Lentil Meatballs but in Turkey ladies make this Lentil Meatballs without using meat. This is its property. Let’s look how  I can make it.

Ingredients:

  • A cup of red lentil
  • A cup of thin pounded wheat
  • 1/4 vegetable oil
  • 1 tbsp tomato paste
  • A bunch of parsley
  • A bunch of green mint
  • A bunch of green onion
  • Half lemon
  • A pinch of salt
  • A pinch of black pepper
  • A pinch of cumin

 

Recipe:

Wash the lentil and drain it. Put it in pot and add  hot water passing over the level of lentil. Boil it until it gets soft. When the lentil is cooked enough add a cup of thin pounded wheat in it then put the lid on the pot and wait for 15 minutes.

Wash parsley, green mint and green onion carefully and chop them small piecess.

 Put  a pan on fire and put vegetable oil in pan. Heat it for about 2-3 minutes then put 1 tbsp tomato paste in it.  Saute the tomato paste by stirring.

Take the lid from the pot and check the lentil ( It is important that there shouldn’t be any water. If there is no enough water in it put some extra hot water in it.)

Add the sauted paste, salt and the other spices in it then knead them perfectly.  After kneading, add the chopped vegetables in it then stir. Take pieces as big as a walnut and make small  balls with your palms.

Lentil Soup

lentil-soup    When we talk about Madonna, Lentil Soup comes to our minds. My grandma always says Lentil Soup gives energy and beauty to women who eat it. I admire Madonna. When my brother says he wants Madonna Soup he means lentil soup. In fact I  admire Madonna’s young appearance and intelligence so I cook lentil soup every time for my children to look young everytime.

Ingredients :

  • A cup of red lentil
  • A middle size onion
  • A middle size potato
  • A middle size carrot
  • 4 tbsp olive oil
  • 3 cups of water
  • A pinch of dry mint
  • A pinch of salt

 

Recipe:

Wash the lentil and drain it then put the lentil in a pot. Peel onion, potato and carrot. Chop and put them on lentil. Pour water in it and cook it until it gets soft then put this vegetable mixture in a mixer and mix it until it gets smooth. 

Put olive oil in a pot then pour the smooth vegetable miture in it. Add a pinch of salt and dry mint and stir it carrefully. Boil it for about 10 minutes.

Serve it hot and before eating you may put some lemon juice in it.

Enjoy it.

Become youthful and become beautiful with eating this lentil soup. This soup also destroys extra fat in your body.

Broccoli With Yoghurt

broccoli12I went to cinema the previous day with my husband. The film finished at late hours. We arrived home at late hours too. Because of going to cinema just after my work we were very hungry. So we wanted to eat more food but this was unhealty. Because of this reason we decided to eat  a light dish. A wonderful idea came to my mind: Broccoli!

Broccoli is my favourite vegetable. we like to eat broccoli because of its flavour. We eat broccoli with yoghurt and we call this dish Broccoli With Yoghurt. Another reason of consuming  broccoli is health. Broccoli also contains vitamin C (high degree),vitamin K, multiple nutrients with potent anti-cancer properties and soluble fiber. Broccoli reduces the risk of prostate cancer. After all broccoli is eaten raw because if the broccoli is boiled it it reduces its anti cancer feature so you should eat broccoli raw.broccoli

We make Broccoli With Yoghurt by mashing garlic. And garlic is also a medicine storage. Garlic protects us from heart disease, high cholesterol, high blood pressure and atherosclerosis.

 In fact we can say that we make a medical dish :)

Ingredients :

  • 250 gr broccoli
  • 5-6 tbsp yoghurt
  • 3 cloves garlic
  • A pinch of salt

Broccoli With Yoghurt recipe:

Wash broccoli perfectly and dry it. Put broccoli pieces in a mixer and press the button. Wait until it bacomes small pieces. Peel the cloves of garlic and mash it in a bowl. Add yoghurt and a pinch of salt in it then stir it with adding broccoli until it gets smooth. You may also use this dish as a  hors d’oeuvre.

 Enjoy it.

Hunter Pastry

 It is for especially hunters  and  mountaineers . Furthermore, this pastry has a perfect recipe for that who doesn’t like eating chicken. It is so yummy and so nutritive.

Ingredients :
  • 5 phyllo sheets
  • 1 cup milk
  • 1/2 sunflower oil
  • 1 egg

for filling:

  • 2 tbsp sunflower oil
  • 5 middle size carrots
  • 2 piece of chicken breast
  • 1 onion
  • A pinch of salt
  • A pinch of black pepper

Recipe:
First of all boil the chicken breast in a pot with some black pepper until it cooks enough.
Lets prepare the filling… Chop the onion and put oil in pan then put the pan on fire. Put the chopped onion in it and saute it. Peel the carrots and grate it. Put the grated carrot in that pan and saute it with the onion for 7-8 minutes. Add a pinch of black pepper and salt in it then take it from the oven. Get the boiled chicken brest to  small pieces then put it on the carrots and stir them. After that let them cold.  

And now let’s prepare our pastry(borek)…
Mix milk,egg and sunflower oil in a bowl then lay a phyllo on countertop. Spread 4-5 tpsp milky mixture with the help of a kitchen brush on the whole phyllo. Make a square by putting together the phyllo then cut it from the middle of the square to four equal pieces. Fill all of the pieces with filling and put the phyllo pieces together then lay the opposite side of the phyllos on tray. Bake it in  oven until the top of the phyllo gets golden.
