Flaky-Pastry-With-Curd1Yesterday night I  got excited about my aunt’s and my sister’s visit. I miss them very much. First my aunt came and then her two sons and my sister came the following day. They were very happy to see my doughter. They came here yesterday morning and I wanted to prepare them breakfast. I wanted to prepare Flaky Pastry With Curd. My whole family loves this flaky pastry.  Especially at breakfasts Flaky Pastries go very well with tea. We call them ‘pogaca’ in Turkish.

  • A cup of yoghurt
  • An egg
  • ½ cup of sunflower oil
  • 1 tsp baking powder
  • ½ tsp salt
  • 3  cups of all purpose flour

  • 100 gr. Curd
  • A bunch of dill
  • A pinch of thyme (optional)

Recipe:
Lets prepare the filling of Flaky Pastry. Wash a bunch of dill well then drain. After draining chop them perfectly and stir it with the curd by your hands. The filling is ready. ( If you want add a pinch of thyme in it.)

Put yoghurt and the egg in a bowl then stir them and   add salt, oil and baking powder in it then again stir. After doing that add flour slowly by stiring continuous. Then knead the dough.

Flaky-Pastry-With-Curd4Take a piece of dough as big as a  walnut. By pressing with your hands roll out the dough. Put the filling on the half part of the dough and close the other part of the dough. Making like this they seems like half moon. Make the whole dough like this and put them on a tray and rub egg with the help of a brush and sprinkle  seeds of nigella sativa each of them. Bake it at 180ºC – 355 ºF until their surface get red. Enjoy.Flaky-Pastry-With-Curd5

I told you before the celebration dinner  of my baby’s f”orty days.” I made this yummy cake that day.   Finishing forty days from birth is our heritage and a belief. Now my baby is growing up day by day. Her sleeping, feeding,  and excretion look like an adult person’s. All these are new for my baby. When a baby finishes forty days, we celebrate it on the fortieth day. In Turkish we call this “kırk uçurmak”; in English we may translate this phrase  as “fly the forty days”. On the fortieth day of the birth, first of all the baby is washed then mother has a bath. After this mother visits a neighbour with her baby. The neighbour expresses good wishes about the baby and before they leave, owner of  the house gives eggs and sugar then touches some flour to forehead of baby. The egg means production, sugar means good and sweet life and flour means  intelligence.
I made this yummy cake with the egg and sugar that our neighbour gives us. I  name it “The Forty Days Cake” being  inspired by “fly the forty days”. I think it is made  for the honor of her.The-Forty-Days-Cake2
Here is the recipe:
Ingredients:
•        A cup of milk
•        A cup of sugar
•        3/4 cups of corn oil or sunflower oil
•        2cups of all purpose flour
•        A cup of corn flour
•        3 eggs
•        1 packet of baking powder
•        1 packet of vanilla
•        2 cups of edible nuts( peanut, hazelnut, walnut, almond)The-Forty-Days-Cake1

First of all mix egg and sugar with the help of mixer then put vanilla and baking powder  and pour a cup of milk and put 3/4 cups of corn oil or sunflower oil and add all purpose flour and corn flour in it and mix it with a mixer perfectly. Put edible nuts  in it then mix.
Spread  oil the cake mold with a brush then pour the mixture in it. Bake it at 180ºC – 355 ºF for 25-30 minutes.

Salicornia Salad Video

Yesterday my husband’s sister and her husband came to us. In fact they came to us to see our baby.  They broght Turkish raki, fish and  salicornia as a savory food. We altogether prepared the dinner. This was not only a dinner also a celebration of my doughter’s The Forty Days. In Turkey most of us   celebrate  The Forty Days. This is a kind of a belief. According to this belief  if a baby finishes, forty days from birth s/he will be healhty in the future and s/he will have a good life. It is only a belief but if we research  how this belief appears from past to now we find something interesting. In fact “the forty days” belief is an important time interval for a baby because on this time interval a baby maybe  becomes ill or not but her/his body gets used to our world. His/her body learns how to fight with viruses, other microbic organisms and also  every kind of ilnesses. According to this belief forty days later a baby is ready to live.Salicornia-Salad3

We fried fish, prepared Salicornia Salad and they drank Turkish raki I had apple juice yesterday. Our fish was Sea Bass. As I told before Sea Bass is verry yummy fish. We ate garden rocket and Salicornia Salad.

Ingredients:

  • A bunch of salicornia
  • A lemon
  • 5-6 cloves of garlic
  • Half glass of olive oilSalicornia-Salad4

Recipe:
First of all wash a bunch of salicornia perfectly then put the bunch of salicornia in a pot. Then pour water in it and put the pot on fire. Boil it  for 10-15 minutes. After boiling take the boiled salicornia from the pot. Put it  in a cullender then  put it under water in order to getting cold. After that strech it from both edges to peel the salicornia because It has a hard stringy core in it. Pull off the core from the edible part of the salicornia .After pulling all of the salicornias mash the garlic cloves then put the mashed garlic on the peeled salicornias then pour the olive oil  and squeeze a lemon  on it. Mix them carefully. It is ready for your beautiful dinner as a savory food.Enjoy.Salicornia-Salad2

We purchase every kind of vegetables and fruits from the bazaar. In Tire there is a big bazaar. It is called “Tire Bazaar.” It is realy big and cheap. In Tire Bazaar you can find whatever you want. Everybody in Tire or people from the other cities come here to purchase fresh vegetables and fresh fruits. The sellers bring their vegetables and fruits from their gardens. The farmers grow organic plants here. They do not use hormonic   chemicals to the plants so we buy them with a big contentment.
We purchase salicornia from the bazaar too. Salicornia  grows on beaches so it has high salt content.  Because of this there is no need to use salt with this salad.
Salicornia contains lots of mineral in it like sodium, potassium, magnesium, iodine, sulfur, zinc, phosphorus, calcium and iron. It grows on iodic soil so it helps to heal a goiter patient  from the ilness of goiter. It   has lots of benefits to eat this nutritive Salicornia Salad.

Purslane grows  everywhere in Turkey.  It  is  also known as Verdolaga, Pigweed, Little Hogweed or Pusley. In fact it is a kind of weed and it grows  naturaly. We use it as salad with every kind of  dish. Eating purslane is healty for everyone especially pregnants. Purslane has lots of nutritional benefits for our health because Purslane contains Omega 3, vitamin A, vitamin C,  vitamin B, magnesium, calcium, potassium and iron..
We sometimes pick up from garden or purchase from the bazaar. Today again my husband made this yummy Purslane Salad. Purslane Salad is made from purslane , garlic, yogurt and a pinch of salt.
Garlic is an important plant for everyone because Garlic prevents heart disease, high cholesterol, high blood pressure and cancer and also garlic has cardiovascular benefits.
This is the recipe of Purslane Salad:
Wash a bunch of purslane perfectly then cut them from the middle then take out of the root part after that put it in a bowl and pour water in it and add vinegar in it. Addding vinegar is good for the microbic organismas. Vinegar cleans the microbic organismas from the purslane and like other fresh weeds or vegetables. After cleaning, chop the purslane well and put it in a bowl then mash 3 or 4 cloves of garlic then add the mashed garlic  and  yogurt in it. Then sprinkle a pinch of salt in it  then mix them perfectly. It is ready. Purslane Salad  goes very well with Turkish Raki as a savory food. Enjoy.

Poppy Seed Bun Video

This morning my husband and my mom surprised me. They, together, prepared these yummy Poppy Seed Buns. Yesterday nigh I didn’t sleep because of my little princess. I have to feed my baby every two hours. She sleeps all the day and I wake her up every two hours and suckle her so I have irregular sleep times. Thanks to my mom and my husband. They always help me at house works and in kitchen. For example they clean our home and they start to cook dishes for us. As I said at the beginning of my sentence they surprised me and they made Poppy Seed Buns. I made Gozleme before if you remember. And I used poppy seeds with Gozleme. On this photo you see popy seeds but when making Poppy Seed Buns we use mashes seeds.

Ingredients :

  • 1 kg all purpose flour
  • 1 tbsp salt
  • a packet of instant yeast
  • Enough water

For filling:
a cup of walnut
a cup mashed poppy seeds
a cup of ground walnut
a cup of sun flower oil

Recipe:
Put whole flour in a case then put instant yeast and salt in it then pour water in it then knead it carefully after that cover the case with a cloth then wait it to rise for an hour. On the other hand prepare the filling. Put the mashed poppy seeds in a case then pour some oil and add ground walnut in it. Mix them perfectly .After waiting for an hour take the cloth from the case.
Before rolling the dough lets prepare the kitchen board. Sprinkle flour on to kitchen board in order not to stick to kitchen board. Now take a piece of dough from the dough case and roll it with your hands.Dough
As you watch on video. Roll out the dough then put the mixture on the dough then spread it perfectly. Then roll it as you see on video then strech it from both edges to extend and swirl it. Dough2Pour oil in a tray and spread it. After making buns put them in that tray then put the tray in oven.Dough3
Heat the oven on 175C(347F). Bake the buns for 25-30 minutes.
After 25-30 minutes later take out the tray from the oven. Wait the buns to get cold. After getting cold you can serve and eat the buns with tea. Enjoy.Poppy-Seed-Bun

Easy Summer Dessert Video

My mom came to us for helping with my little princess. Baby care is really hard. Today we want to eat someting sweet then I prepared this milky dessert to my mom. This easy summer dessert is both light and nutrious.

Ingredients

  • 2 or 3 packets of cream powder
  • a cup of milk for cream
  • 2 packets of biscuits with oat( as you see on the video)
  • a packet of chocolate powder
  • 2,5 cups of milk for chocolate cream

Recipe:
Put 2 or 3 packets of cream powder in a pot then pour a cup of milk in it. Prepare the cream by mixing milk and cream powder with the help of mixer.
Put biscuits in a pot and crumble them perfectly then stir the crumbled biscuits with the cream then put this mixture in a glass tray. Spread the mixture in that glass tray then put this tray in fridge.

And now lets prepare the chocolate cream. Pour 2,5 cups of milk in a pot with chocolate powder and stir them with a spoon. Then put the pot on fire and stir it continualy. Cook it on fire until it gets right consistency.It must be as thick as pudding. Take the tray from fridge and pour the chocalate mixture on it.

Serve cold. Enjoy.

Bell Pepper With Butter For Breakfast

bell-peppers-freshToday an idea came to my mind at breakfast time.I want to prepare something different for my family. Do you know bell peppers? Is it interesting to eat bell peppers at breakfast. Maybe it is interesting and also different. But I prepared bell peppers with butter and a pinch of salt.

bellpepperswithbutterFirst of all you must wash the bell peppers then cut their tops. After cutting take their seeds out. Put them in a glass tray for ovens then put some butter inside each of them and sprinkle salt in it.

bellpepperswithsaltPreheat the oven at 175ºC and then put the tray in it and bake it for 25-30 minutes. After baking the bell peppers take out them and chop them perfectly. It is ready to be eaten at breakfast.

Fried Sea Bass

sea-bass11Having a little baby is hard for everyone. I gave birth to my precious daughter  20 days ago.My baby came to our life. We are so happy. So I couldn’t write anything on my blog for a long time. also I couldn’t cook anything until today.   I think I won’t be able to cook for another long time. Anyway, today my husband fried sea bass. sea-bass2He prepared a differend corn flour for sea bass. There is no need to say anything. This is the recipe:
Of course we need corn flour, sesame and a pinch of red pepper flakes( My husband put “isot” for pepper. Isot is a kind of red pepper from Southeast Anatolia ) and a pinch of salt. Mix all of these perfectly.
sea-bassFirst of all clean the fish and if you want you can cut sea bass into two aqual parts. After doing this, dip sea the bass in this flour. Then put sun flower oil in a pan then heat the pan. A few minutes later you can start to fry all fish.

You  can eat this fish by squeezing lemon on it. Enjoy!

Pea Salad

pea-saladOne of my neigbour had a birthday last week and we wanted to make a beautiful surprise for her as the building dwellers. Everyone would prepare something. One of our friends would take over a birthday pastry. One of our friends would take over beverages.  Appetizers are necessary for the beverages. Everyone would prepare a different appetizer and we would meet at the door of our neighbour who had a birhday at 20.00. I decided to prepare Pea Salad a different local flavour as an appetizer. I started to prepare it before the meeting hour and I made it. I went to the party with this salad in my hand.  When we all gathered in front of the door of our friend at the fixed time, she opened the door with a big surprise at night. We celebrated her birhday all together. Of course drinking is forbidden for me because of being pregnant. My friends drank all the night and they ate appetizers. They finished the whole appetizers. Guess which appetizer finished first ?

Here is the recipe of the favourite Pea Salad appetizer.

Ingredients:

  • 500gr fresh pea
  • a lemon
  • 5-6 cloves of garlic
  • 4-5 tbsp olive oil
  • 2 cups of water

Recipe:

First of all string the peas then wash them. Cut the fresh peas in two.Put them in a pot and boil in two cups of water. When they soften, take out the peas from the pot and drain then put them on a plate. Mash the cloves of garlic in a bowl then put the mashed garlic, lemon juice, olive oil and a pinch of salt on peas then stir them perfectly. Now it is ready.

Pea  salad goes very well with alcohol drinks.

Pumpkin Dessert

I’ve always loved pumpkin dessert since my childhood. Sindrella and her prince come into my mind when I think pumpkin dessert. Sindrella, who has a pumpkin car and glass shoes has to arrive home before the clock shows 12.00.When I decide to make pumpkin dessert, The Story Of Sindrella comes into my mind.

Today I made Pumpkin Dessert. Here is the recipe:

Ingredients:

  • 1kg pumpkin
  • 3/2 cups of sugar
  • 2-3 cloves
  • a cup of crumbled walnut

Recipe:

Peel the pumpkin and wash then slice the pumpkin and put it in a pot then sprinkle sugar on it and close the cover overnight. Pumpkin will get its water out on that time. Put the cloves in that pot the following day then cook them until the pumpkin get soften. When it gets cold, take it in a plate and  sprinkle crumbled walnuts on it.
