Fried Sea Bass

sea-bass11Having a little baby is hard for everyone. I gave birth to my precious daughter  20 days ago.My baby came to our life. We are so happy. So I couldn’t write anything on my blog for a long time. also I couldn’t cook anything until today.   I think I won’t be able to cook for another long time. Anyway, today my husband fried sea bass. sea-bass2He prepared a differend corn flour for sea bass. There is no need to say anything. This is the recipe:
Of course we need corn flour, sesame and a pinch of red pepper flakes( My husband put “isot” for pepper. Isot is a kind of red pepper from Southeast Anatolia ) and a pinch of salt. Mix all of these perfectly.
sea-bassFirst of all clean the fish and if you want you can cut sea bass into two aqual parts. After doing this, dip sea the bass in this flour. Then put sun flower oil in a pan then heat the pan. A few minutes later you can start to fry all fish.

You  can eat this fish by squeezing lemon on it. Enjoy!

Volcano Meat Balls

volcano-meatballsLast week my mother- in-law came to my home.She came form the southern Turkey. And there they make local dishes like İçli Köfte.İçli Köfte is a famous dish in Turkish Cusine. Everyone in Turkey like it. It has lots of kinds.  I don’t know how to translate it’s name into English. Let me try: Semolina meatballs, Filling balls… I think I’ll find at the end of the recipe.volcano-meatballs2

 Ingredients

  • 2 cups of pounded wheat
  • a middle size onion
  • 1 tbsp pepper paste
  • 1 tsp cumin
  • 1,5 cups of semolina
  • 2 tbsp all purpose flour
  • 1 tsp salt

For filling

  • 1/2 minced meat
  • 125gr margarine
  • 5-6 middle size onion
  • 1 tsp black pepper
  • 1 tsp cumin
  • a pinch of red pepper

Recipe:

Put the pounded wheat in a bowl then add a cup of water in it and also put the samolina in an another bowl then again add little water on it. Wait them as they are wet. When the pounded wheat gets soften, add cumin, salt and paste then grate the onion. Knead this mixture perfectly then add the semolina and again knead this mixture perfectly.

Preparing its filling:

Melt the margarine in a pan. Put the minced meat on it and roast this minced meat in it. Mince the onions then put them on that pan and go on roasting. Roast it by adding salt, black pepper,cumin and red pepper. Turn off the button of the oven then wait it to get cold.

First of all, take a pinch of kneaded pounded wheat as big as a walnut and roll it like a ball then press your finger middle of the rolled ball and open the ball like a volcano and put your minced filling in it then close crater of the volcano with kneaded pounded wheat perfectly. Continue doing like this until it finishes.  After finishing all balls lets prepare it for servinng.

Add juice of a lemon in 1lt water then boil it. When the water boils put balls in it one by one but be careful put spaces in that water balls shouldn’t touch each other in the water. When the balls come to surface of the water it means they are ready to be eaten.

Kilis Stew

kilis-stew2We were in Gaziantep/Turkey last year for our holiday.We visited one of my friends at Kilis.We stopped by Kilis and saw the magnificence of Zeugma. Water rised up top to Zeugma. The boughs of olive trees were waving in water. I was so upset because of this.

Surprisingly enough I saw a butcher, a green grocer, a bakery together side by side.  In Gaziantep/Kilis if there is a bakery in a place, there is absolutely a green grocer and butcher nearby.

I found it very interesting. At night, my friend made us a very special dish called Kilis Tava(=Kilis Stew). Kilis Tava is a Barak(Barack) oven dish. We bought vegetables from green grocer, meat from butcher and we gave it to bakery.  And we ate it with hot bread. It was very yummy. I make that yummy Kilis stew recipe in an electricity oven.

Ingredients:

  • 500gr minced meat
  • 3 middle size of potatoes
  • Half bunch of parsley
  • 2-3 tbsp olive oil
  • 3  silices of bread crumb
  • An egg
  • 2 cloves of garlic
  • A pinch of salt
  • A pinch of black pepper

Recipe:

Put the minced meat in a bowl. Chop the parsley and mash the garlic. Put parsley, olive oil, crumb and egg on minced meat. Sprinkle a pinch of salt andblack pepper in it. Knead this mixture well. Spread oil in an oven tray with a brush and spread the mixture on oven tray. Peel the potatoes and divide potatoes into two then place them on the mixture as diagonal. Bake it at  190ºC -200ºC for 45-50 minutes. You can serve it with pilaf. Enjoy it.

Tire Meatsticks Video

tire-meatballs Aegean Region is famous for its endless number of green species.But here, in Tire ( Tire is  a county of Izmir in Aegean Region)there is a yummy dish called Tire  Meatsticks (Tire Koftesi) and it tastes marvelous. And also there is a street where there are several restaurants serving Tire Meatsticks. Even if you enter this street with a full stomach, you’ll start to feel hungry. Therefore, I learnt how to make these scrumptions meatballs from a cook of one of these restaurants. And now,we don’t need to go that street to have Tire meatsticks. And it’s a pleasure for me to share its recipe with you.

Ingredients:

  • 500gr minced meat
  • A pinch of salt

for sauce:

  • 4-5 middle size tomatoes                                                                                           
  • 1 tbsp butter
  • A pinch of salt
  • A pinch of red pepper
  • 6-7 leaves of parsley
  • 4-5 leaves of dill

Firs of all lets prepare meatballs. Knead the minced meat with salt( attention: only salt!) well then put the minced meat in refrigerator.Wait it in refrigerator for a day. The other day take pieces from minced meat as the size of a walnut then form it in your palms by setting on skewers. After setting the whole  minced meat on skewers cook them on a grill.

Let’s prepare its sauce. Peel the tomatoes and chop them.( to peel them easly put some hot water in a bowl and put tomatoes in it.) Put a pan on fire and put 1 tbsp butter  in it and melt it then put the chopped tomatoes in it. Take the grilled meatsticks from skewers as a whole. Be careful not to shutter them. When the tomatoes melt put the meatsticks on it. Cook them for 4-5 minutes.

Wash the parsley leaves and dill leaves after waiting them in water with vinegar. Before serving mince parsley and dill leavesand sprinkle them on meatsticks.

Ingredients :

  • 1 kg eggplant/aubergine
  • 1 1/2 cup olive oil (for frying)

for filling:

  • 1/4 cup olive oil
  • 1 middle size onion
  • 200 gr minced meat
  • 2-3 green pepper
  • 4 tomatoes
  • A pinch of salt
  • A pinch of black pepper
  • A pinch of red pepper

when you cook in oven:

  • 1 tbsp tomato paste 
  • 1 cup water

Recipe:

Peel the eggplants stripy then wash and dry them. Cut each of them upright. Put a pan on fire then put olive oil in it and fry the eggplants.

While it’s frying let’s start to make the eggplants filling:

Boil some water and put it in a bowl and then put the tomatoes and wait them in water  to peel them easly. Chop the green peppers. Put a pan on fire and put 1/4 olive oil in it. Heat it for about a few minutes. Then chop the onion and put it in pan and saute the onion until it gets golden. Put the minced meat in it then stir it with the onions then immediately put the chopped green peppers in it. Peel the tomatoes and chop them then put them in that pan and stir it. Cook it until the tomatoes boil down.

Mix tomato paste and water in a bowl. Lay the fried eggplants in a big pan. Fill the eggplants with this filling and pour the mixture of water and tomato paste on the eggplants. Cook it in an oven for 20-25 minutes. (175ºC – 340 ºF)

How to cook pilchard?

Fresh Pilcard    When I was passing the fish bazaar I saw pilcards were moving. On that time I decided to cook pilcard. Pilcard is a different fish from the others. Pilcard includes calcium, vitamin B 12 and omega 3. Also pilcard is the biggest enemy of the cholesterol and eating pilcard protects your heart. Today I fry the pilcards.

Ingredients: 

  • 1kg pilcard
  • A cup of corn flour
  • A cup of olive oil
  • A pinch of salt

 

Recipe:

First of all pilcards are dressed and washed. Then, drain it for a few minutes. Stir a pinch of salt and corn flour together in a bowl. Roll the pilcards in that salty flour. 

Put olive oil in a pan and put the pan on fire. When it gets hot put the pilcards in frying.

Also salad goes very well with fried pilcard.

Sauted Meat Recipe

Sauted Meat

 I think Souted Meat is the number one  who loves eating meat . For example my husband. When I said shall we eat meat tonight he kissed me. That was the answer.

  •   Ingredients for Sauted Meat:
  •   1 kg steak ( lean mutton or  lean veal)
  •   1 cup of water
  •   4 tbsp olive oil
  •   A pinch of salt
  •   A pinch of thyme
  •   A pinch of black pepper

Recipe:

Put 4 plts olive oil in  a pot. After that put the steak on it. Put the pot on fire . Let the steak cook until it gets its water out and boils down.  Stir it occasionally by roasting. Than add water in. Cook the steak until it boils down the water.  Sprinkle  a pinch of salt, black pepper and thyme. Turn off the oven. It is ready to be eaten now!

Rice pilaf goes very well with this dish.

King’s Choice

King's Choice    Ingredients:

  •          3 middle size potatoes
  •          5 middle size of green pepper
  •          4 middle size of tomatoes
  •          400 gr  mince
  •          An egg
  •          Two silices of crumb
  •          A pinch of black pepper
  •          A pinch of salt
  •          A pinch of cinnamon
  •          3 tbsp vegetable oil
  •          1 ½ cups of olive oil for frying

 King’s Choice Recipe:

Put olive oil in a pot. Peel the potatoes and slice it. Than wash and dry.  Put the pot on fire.  Waiting after 5  minutes put the  slices of the potatoes in it for frying. Take the potatoes on a side of service plate  after frying.

Then cut the green peppers two or three slices. Put the peppers in the pot. Fry it. After frying take them on the same plate.

As for the meatballs… Put mince, crumb, egg, vegetable oil, salt and spices in a bowl.  Knead the mixture. Make small meat balls from this mixture by kneading. Press each of them in your palm. Then fry  in the pot. After frying take them beside fried potatoes and peppers.

Let’s start to prepare the tomato sauce. Peel the tomatoes and dice. Roast in a small pot for 5 minutes. If you want you can add a pinch of  thyme or mashed garlic. Pour this souce over the plate and enjoy this  marvelous  King’s Choice.
