Flaky-Pastry-With-Curd1Yesterday night I  got excited about my aunt’s and my sister’s visit. I miss them very much. First my aunt came and then her two sons and my sister came the following day. They were very happy to see my doughter. They came here yesterday morning and I wanted to prepare them breakfast. I wanted to prepare Flaky Pastry With Curd. My whole family loves this flaky pastry.  Especially at breakfasts Flaky Pastries go very well with tea. We call them ‘pogaca’ in Turkish.

  • A cup of yoghurt
  • An egg
  • ½ cup of sunflower oil
  • 1 tsp baking powder
  • ½ tsp salt
  • 3  cups of all purpose flour

  • 100 gr. Curd
  • A bunch of dill
  • A pinch of thyme (optional)

Recipe:
Lets prepare the filling of Flaky Pastry. Wash a bunch of dill well then drain. After draining chop them perfectly and stir it with the curd by your hands. The filling is ready. ( If you want add a pinch of thyme in it.)

Put yoghurt and the egg in a bowl then stir them and   add salt, oil and baking powder in it then again stir. After doing that add flour slowly by stiring continuous. Then knead the dough.

Flaky-Pastry-With-Curd4Take a piece of dough as big as a  walnut. By pressing with your hands roll out the dough. Put the filling on the half part of the dough and close the other part of the dough. Making like this they seems like half moon. Make the whole dough like this and put them on a tray and rub egg with the help of a brush and sprinkle  seeds of nigella sativa each of them. Bake it at 180ºC – 355 ºF until their surface get red. Enjoy.Flaky-Pastry-With-Curd5

Poppy Seed Bun Video

This morning my husband and my mom surprised me. They, together, prepared these yummy Poppy Seed Buns. Yesterday nigh I didn’t sleep because of my little princess. I have to feed my baby every two hours. She sleeps all the day and I wake her up every two hours and suckle her so I have irregular sleep times. Thanks to my mom and my husband. They always help me at house works and in kitchen. For example they clean our home and they start to cook dishes for us. As I said at the beginning of my sentence they surprised me and they made Poppy Seed Buns. I made Gozleme before if you remember. And I used poppy seeds with Gozleme. On this photo you see popy seeds but when making Poppy Seed Buns we use mashes seeds.

Ingredients :

  • 1 kg all purpose flour
  • 1 tbsp salt
  • a packet of instant yeast
  • Enough water

For filling:
a cup of walnut
a cup mashed poppy seeds
a cup of ground walnut
a cup of sun flower oil

Recipe:
Put whole flour in a case then put instant yeast and salt in it then pour water in it then knead it carefully after that cover the case with a cloth then wait it to rise for an hour. On the other hand prepare the filling. Put the mashed poppy seeds in a case then pour some oil and add ground walnut in it. Mix them perfectly .After waiting for an hour take the cloth from the case.
Before rolling the dough lets prepare the kitchen board. Sprinkle flour on to kitchen board in order not to stick to kitchen board. Now take a piece of dough from the dough case and roll it with your hands.Dough
As you watch on video. Roll out the dough then put the mixture on the dough then spread it perfectly. Then roll it as you see on video then strech it from both edges to extend and swirl it. Dough2Pour oil in a tray and spread it. After making buns put them in that tray then put the tray in oven.Dough3
Heat the oven on 175C(347F). Bake the buns for 25-30 minutes.
After 25-30 minutes later take out the tray from the oven. Wait the buns to get cold. After getting cold you can serve and eat the buns with tea. Enjoy.Poppy-Seed-Bun

Hunter Pastry

 It is for especially hunters  and  mountaineers . Furthermore, this pastry has a perfect recipe for that who doesn’t like eating chicken. It is so yummy and so nutritive.

Ingredients :
  • 5 phyllo sheets
  • 1 cup milk
  • 1/2 sunflower oil
  • 1 egg

for filling:

  • 2 tbsp sunflower oil
  • 5 middle size carrots
  • 2 piece of chicken breast
  • 1 onion
  • A pinch of salt
  • A pinch of black pepper

Recipe:
First of all boil the chicken breast in a pot with some black pepper until it cooks enough.
Lets prepare the filling… Chop the onion and put oil in pan then put the pan on fire. Put the chopped onion in it and saute it. Peel the carrots and grate it. Put the grated carrot in that pan and saute it with the onion for 7-8 minutes. Add a pinch of black pepper and salt in it then take it from the oven. Get the boiled chicken brest to  small pieces then put it on the carrots and stir them. After that let them cold.  

And now let’s prepare our pastry(borek)…
Mix milk,egg and sunflower oil in a bowl then lay a phyllo on countertop. Spread 4-5 tpsp milky mixture with the help of a kitchen brush on the whole phyllo. Make a square by putting together the phyllo then cut it from the middle of the square to four equal pieces. Fill all of the pieces with filling and put the phyllo pieces together then lay the opposite side of the phyllos on tray. Bake it in  oven until the top of the phyllo gets golden.
